    Meal planning and meal prep can be a big challenge for a lot of people so, much like our beloved Buddha Bowls, casseroles have come to our rescue when it comes to quick meals that can be as healthy as you want them to be.
    Today, we’re sharing 10 vegetarian casseroles we’ve either tried or will be trying soon. We’re also going to talk about how to store these because being able to eat these for days is a big benefit but you want to be sure you’re storing it properly so it actually tastes good when you reheat it.

Great support for those of us who are starting out

Recently made the switch to a vegan/vegetarian (I call myself a mostly-a-tarian) diet because my sweetheart and I would like to eat healthier and lighten our environmental footprint. Hearing from others who have navigated this same switch is immensely helpful, and I really appreciate how Vickie and Larissa share what they’ve learned without dogma or judgement.
